Abstract : Wine making is a domain in which formalization is difficult. The main reason is that the number of heterogeneous knowledge pieces is very large, and this along several steps of the process. Our specific interest concerns the alcoholic-fermentation stops. This step is strongly dependent of events occuring at previous steps. Knowledge on these past events is considered, with respect to the fermentation stops as contextual knowledge. In this paper, we present why and how this contextual knowledge is needed for the building what we call a contextual knowledge based system. This paper is published in the Proceedings of the "Journées de l'Ingénierie des Connaissances, Roscoff, mai 1997.
